Ingredients
1 lb. green beans, ends trimmed
5 red potatoes, sliced
6 eggs boiled and sliced
½ cup pitted black olives
1 cup cherry tomatoes, halved
Dressing
2 anchovies
2 tbsp red wine vinegar
5 tbsp olive oil
1 tsp brown sugar
Instructions
- Bring a large pot of water to boil. Cook potatoes until tender. Drain the potatoes and slice them into bite-size
- Boil eggs for 8 minutes, remove from the pot then leave to cool
- Replace the water in the pot, bring to a boil and cook the beans until tender crisp, 3-4 minutes
- Drain well, pat dry and place them in a large bowl
- Stir in the beans, potatoes, tomatoes, and olives.
- Arrange lettuce leaves at the bottom of a large bowl, add the potato mix and eggs and serve.
Now, for the dressing - mash the anchovies; mix it with the red wine vinegar, olive oil and sugar in a bowl.
