This roasted potatoes recipe is so easy to make and very delicious! I paired this recipe with Sweet Savory Chicken Peach.  The peach sauce greatly enhance the rosemary potato flavor.



Ingredients
1 1/2 lb. small red potatoes, cut into cubes or bite size
3 tbsp. olive oil
1/2 tsp. salt
1/2 tsp. fresh ground black pepper
2 rosemary sprigs
5 garlic cloves, peeled and minced

Instructions
  • Preheat oven at 450 degrees F
  • Using a Ziploc bag, put all the ingredients in the bag and shake to coat
  • Spray baking sheet with oil lightly before adding the potatoes
  • Spread out the potatoes into 1-layer, roast for at least 45 minutes or until golden and edges are crisp
