Anyone who knows me can attest that I love seafood!  I can be a Pescetarian if I want to.  So tonight, I made the best seafood soup I have ever tasted during my travel to Portugal. I guess tonight is throw back Monday, is there such a thing? :-)

This is another easy peasy recipe - you will have your dinner ready in 30 minutes. 

Ingredients
3 cups fish stock or clam juice
4 cloves of garlic, minced
1 green bell pepper, chopped
1 small onion, finely chopped
1 cup tomato sauce
1 tomato, diced
1 lb. clams, cleaned
1/2 lb. squid (calamari), cleaned and sliced
1/2 lb. small scallops
1 lb. shrimp
1 lb. any white fish
1/4 cup flat parsley, minced
pinch of saffron (optional)
salt and pepper to taste
2 tbsp. olive oil or vegetable oil



Instructions
  • Heat olive or vegetable oil in a large pot or Dutch oven over medium heat.  Add minced garlic and chopped onion, cook for 5 minutes or until the onion is translucent, stirring occasionally.
  • Pour the fish stock or clam juice and tomato sauce; add bell pepper and diced tomato; season with salt, pepper and saffron if using any; simmer for 10 minutes. 
  • Add clams, shrimp, scallops and fish; cook for 7 minutes or until the shrimp are done and clams are open. Make sure to discard any unopened shells
  • Lastly, stir in minced flat parsley and serve immediately.
  • Serve with rice
