This is a great recipe on weekdays especially when I don't have a lot of time.  It is very easy to make and has a fabulous array of flavors.


Ingredients
4 8oz filets cod
3 cloves garlic, minced
1 small sweet onion, sliced
1 tsp. dried thyme
2 tbsp. fresh italian parsley, chopped
1/4 tsp. pepper flakes
4 - 5 roma tomatoes, diced
3 tbsp. olive oil
salt and freshly ground black pepper
1/4 cup chicken stock

Instructions
  • In a large pan, sauté garlic until golden brown then add onion, cooked until translucent
  • Next, add diced tomatoes, cook for 2 minutes
  • Pour the chicken stock, add thyme, pepper flakes and season with salt and freshly ground black pepper
  • Bring to a simmer, and then add the fish fillets to the pan and baste with the sauce
  • Cook for 8 minutes.  
  • Add 1 1/2 tablespoon chopped parsley.  If the sauce is a little thin, let it reduce over medium heat for at least 2 minutes
  • Serve the fish and garnish with the remaining chopped parsley
