This is another of my super easy recipe. You can make this in less than 10 minutes.  All you need are the following list of items.  
I don't know about you guys, but I like my omelette fluffy and not dense and the secret is a lot of whisking.

Ingredients
5 eggs
3 strips smoked salmon, sliced
1 cup spinach
freshly ground black pepper
1 tbsp. of milk
1 tbsp. melted butter

Instructions

  • Crack the eggs into a bowl, add pepper and 1 tablespoon of milk; whisk them enough to emulsify and aerate the mixture.  This makes the omelette fluffier.
  • Heat a non-stick pan over medium-high heat, add the butter and brush it around the pan.
  • Add the spinach and cook for 1 minute
  • Pour the eggs into the center of the pan; the eggs will start to form a semi solid mass, lift the pan and move it around until the excess liquid from the eggs pours off into the pan. 
  • Now is the time to add the smoked salmon. Let the omelette sit in the pan for 20 seconds
  • Using spatula, fold over one-half of the omelette
  • Transfer the omelette into a plate and serve hot
