I grew up eating this tropical fruit so the unique taste is not new to me. I love papaya due to its benefits. It's a source of vitamin A, C and K. It's rich in dietary fiber, and potassium.

Ingredients
*Note: You can adjust the toppings or fixings to suit your tastes.
1 medium ripe papaya
1 coconut yogurt
1/2 cup raspberries
1 banana, sliced
1/2 cup Kind honey and oats with toasted coconuts
toasted coconuts (optional)
Instructions
Slice papaya lengthwise
Remove the seeds from the papaya
To assemble this "pick me up" papaya boat - fill each side with coconut yogurt, fruit and sprinkle with honey and oats with toasted coconuts
Serve immediately!
