You've got to try this simple easy to make quinoa fried rice recipe. It's light, healthy and packed full of protein and greens!  You can customize this recipe and add even more protein such as chicken, shrimp, ham or anything you want.

Ingredients
5 cups red or white quinoa, cooked
3 tbsp. coconut oil
4 cloves garlic, minced
1/2 medium onion, diced
1 bunch asparagus, cut into bite-size 2-inch sections
1 bunch broccolini, cut into bite-size 2-inch sections
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
2 tbsp. soy sauce
3 tbsp. oyster sauce
Freshly ground black pepper

Instructions

*Note: You can cook the quinoa the night before to save you time.


  • Heat a large wok or pan over medium to medium-high heat.  Once it is heated, add the coconut oil. Sauté garlic until golden brown then add onions and cooked until translucent
  • Add the bell peppers and cook for 2 minutes. Add the asparagus and broccolini and cook for about 2 minutes.
  • Pour the soy sauce and oyster sauce; stir until sauce is well distributed
  • Turn the heat up slightly and add the cooked quinoa.  Season with freshly ground black pepper
  • Cook for another 5 minutes or until the mixture is hot
  • Serve with fried egg on top and enjoy!
