Ingredients
5 cups red or white quinoa, cooked
3 tbsp. coconut oil
4 cloves garlic, minced
1/2 medium onion, diced
1 bunch asparagus, cut into bite-size 2-inch sections
1 bunch broccolini, cut into bite-size 2-inch sections
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
2 tbsp. soy sauce
3 tbsp. oyster sauce
Freshly ground black pepper
Instructions
*Note: You can cook the quinoa the night before to save you time.
- Heat a large wok or pan over medium to medium-high heat. Once it is heated, add the coconut oil. Sauté garlic until golden brown then add onions and cooked until translucent
- Add the bell peppers and cook for 2 minutes. Add the asparagus and broccolini and cook for about 2 minutes.
- Pour the soy sauce and oyster sauce; stir until sauce is well distributed
- Turn the heat up slightly and add the cooked quinoa. Season with freshly ground black pepper
- Cook for another 5 minutes or until the mixture is hot
- Serve with fried egg on top and enjoy!
